Longganisa Recipe | Filipino Sausage

Ingredients:
*1 kilo ground pork (include the pork fat)
*1 spoon salt
*1 spoon brown sugar
*1 spoon paprika
*1/4 teaspoon saltpeter (salitre)
*1/2 teaspoon crushed laurel leaves
*1/2 teaspoon ground black pepper
*1/2 teaspoon red peppers, minced
*4 cloves of garlic, crushed then minced
*1/4 cup vinegar
*1/8 cup soy sauce
*Sausage casings

Instructions:

*In a big mixing bowl, combine all ingredients except the sausage casings
*Mix well and let stand for an hour
*Tie one end of the sausage casing and slowly fill the casing with the ground pork mixture until the end of the casing, then tie the end
*Tie the middle of the sausage casing in intervals of about 3 inches.
*Keep refrigerated for 2 to 3 days
*To cook, boil longganisa in 1/2 cup of water on a pan or wok. Water will soon evaporate then oil will ooze from the longganisa. Fry it on its own oil or add a few tablespoons of cooking oil and continue to cook for 5 to 10 minutes or until the sausage casings turn brownish.

Adobong Baboy (Braised Pork in Tangy Sauce)

Ingredients :

* 1-1/2 lb. pork, cut into serving pieces
* 3 cloves garlic, crushed
* 1/3 cup vinegar
* 3 tbsp. soy sauce
* 1 bay leaf
* salt to taste
* 1/4 tsp. pepper or 1 tsp. peppercorns
* 1 tbsp. sugar (optional)
* 1/2 cup water
* oil, for frying


INSTRUCTIONS:

1. Combine all ingredients in a big pot except the oil and let stand for at least 30 minutes.
2. Place pot over medium heat and bring to a boil.
3. Lower the heat and simmer covered until meat is tender for about an hour (checking occasionally for the water not to get dry, just add a little water each time you see its almost dry up). You may adjust the seasoning according to your taste and liking. Drain and reserve sauce. Set aside.
4. Meanwhile, heat oil in a pan over medium heat. Fry the meat until lightly brown on all sides. Set aside and keep warm.
5. Pour off all remaining oil from the pan. Pour in back the meat and reserve sauce. Mix for about a few minutes while scraping up the bits on the bottom of pan.
6. Remove from heat. Serve hot.

Chicken Curry Recipe (Filipino Style)

Ingredients :

* 2-3 tbsp. oil
* 3 potatoes, peeled, quartered and fried
* 1 lb. chicken, cut into serving pieces
* 3 cloves garlic, minced
* 1 large onion, quartered
* 1 tbsp. patis (fish sauce)
* 3 tbsp. curry powder
* salt and pepper
* 1 cup water
* 1 red bell pepper, cut into big squares
* 1 green bell pepper, cut into big squares
* 3 celery stalks, cut into 1-1/2” long
* 1 cup coconut milk or evaporated milk

INSTRUCTIONS

1. Pan fry potatoes. Set aside.
2. In the same pan, fry chicken pieces and brown a little.
3. Add garlic and onion. Sauté for a few minutes until soft.
4. Pour in patis and season with curry powder, salt and pepper. Stir for 2 minutes.
5. Add water. Cover and bring to a boil. Lower the heat; add celery, bell peppers and fried potatoes. Simmer for 3 minutes or until half done.
6. Add milk and stir occasionally. Cook for another 7 minutes (or lesser when using evaporated milk because the liquids will curled).
7. Remove from heat. Serve hot.

Chayote Guisado / Sayote Guisado (Sautéed Chayote)


Chayote Guisado / Sayote Guisado (Sautéed Chayote)

Ingredients :

* 2 to 4 pieces chayote squash, pared, seeded and sliced
* 1 tbsp. vegetable oil
* 1/2 lb. pork, sliced
* 2 cloves garlic, minced
* 1 onion, chopped
* 2 tomatoes, chopped
* 1 tbsp. patis (fish sauce)
* salt and pepper, to taste
* water

INSTRUCTIONS

1. In a pan, heat oil over medium heat. Cook pork until it turns slightly brown.
2. Add garlic, onions and tomatoes. Sauté for a few minutes until tomatoes wilted.
3. Add chayote slices. Season with patis, salt and pepper. Stir-fry for few minutes until well blended.
4. Pour in water and bring to boil. Cover, lower the heat and let it simmer until chayote is tender.
5. Correct the seasonings according to your style and liking.
6. Remove from heat. Transfer to a serving dish. Serve hot.

Embutido (Filipino Style Meatloaf)


Embutido (Filipino Style Meatloaf)

Ingredients :

* 1 lb. ground pork
* 1/2 cup finely chopped carrots
* 1 cup (6 slices) finely chopped (sweet or cooked) ham
* 3 tbsp. minced green bell pepper
* 3 tbsp. minced red bell pepper
* 1/3 cup sweet pickle relish
* 1/4 cup raisins
* 3 whole eggs
* 1/2 cup grated cheddar cheese
* dash of liquid seasoning
* salt & pepper, to taste
* 1 tbsp. cornstarch
* slices (wedges) of hard-cooked eggs (see recipe)
* slices (wedges) of Vienna sausage
* aluminum foil, 10" x 12" sizes

INSTRUCTIONS

1. Prepare a steamer and set aside. Alternatively, prepare a baking pan and a wire rack and preheat oven to 350°F.
2. In a bowl, combine all the ingredients and mix until well blended.
3. Divide the mixture into 2 to 4 portions (depending on how many you want to make).
4. Spread and flatten the mixture onto the center of each foil, divide the slices of hard cook eggs and Vienna sausages. Place each slices at the center of each mixture. Hold the foil onto your hand and roll until the ends of the mixture covers the eggs and sausages. Alternatively, by holding each ends of the foil, roll the mixture back and forth until it covers the slices of eggs and sausages in the center.
5. Finally, roll the aluminum foil into a tightly packed log about 1" to 2" in diameter, sealing on both ends. Repeat with the remaining pork mixture.
6. Place the embutido in a steamer and steam for an hour. Alternatively, place embutido in a wire rack on a baking pan, half filled with hot water. Cover with aluminum foil (Be sure the steam will not escape). Steam-bake in the center of the oven for an hour.
7. Remove from the oven. Let it cool and slice into rings. Serve with your favorite catsup or sauces.
8. Refrigerate unused embutido.

Pinoy Food Recipe Ingredients:

*1 kilo of beef (round or sirloin cut) cut into cubes, beef tripe or oxtail (cut 2 inch long) or a combination of all three (beef, tripe and oxtail)
*3 cups of peanut butter
*1/4 cup grounded toasted rice
*1/2 cup cooked bagoong alamang (anchovies)
*2 pieces onions, diced
*2 heads of garlic, minced
* 4 tablespoons atsuete oil
*4 pieces eggplant, sliced 1 inch thick
*1 bundle Pechay (Bok choy) cut into 2 pieces
*1 bundle of sitaw (string beans) cut to 2" long
*1 banana bud, cut similar to eggplant slices, blanch in boiling water
* 1/2 cup oil
*8 cups of water
*Salt to taste

Pinoy Food Recipe Instructions:

*In a stock pot, boil beef, tripe and oxtails in water for an hour or until cooked. Strain and keep the stock.
*In a big pan or wok, heat oil and atsuete oil.
*Sauté garlic, onions until golden brown, then add the stock, toasted rice, beef, oxtail and peanut butter. Bring to a boil and simmer for 15 minutes. Salt to taste.
*Add the eggplant, string beans, pechay and banana bud. Cook the vegetables for a few minutes - Do not overcook the vegetables.
*The Pinoy food recipe of kare kare is ready to serve with bagoong on the side and hot plain rice...nice and hot ! Enjoy it !

Pinoy Food:Beef Morcon Recipe

A nice Pinoy food recipe to try !
Ingredients:

*1 kilo beef, sliced 1/4 inch thick (3 pcs.)
*1/4 kilo ground beef liver
*200 grams sliced sausages or ham
*200 grams pork fat (cut is strips)
*3 hard boiled eggs, sliced
*100 grams cheddar cheese in strips
*100 grams grated cheddar cheese
*2 onions, chopped
*5 bay leaf (laurel)
*1/2 teaspoon of ground black pepper
*1/2 cup vinegar
*2 teaspoon salt
*2 cups of water
*2 meters thread or string (for tying)

Instructions:

*Spread and stretch the sliced beef on your working table.
*Arrange the filling on the sliced beef: sausage strips, cheese strips, sliced eggs, pork fat and some ground liver.
*Roll the sliced beef with all the filling inside and secure with a thread or string.
*Repeat the procedure for the two remaining beef slices.
*On a pot, place the beef rolls and put the water, the remaining ground liver, grated cheese, chopped onions, bay leaves, ground black pepper and salt.
*Cover the pot and bring to a boil. Simmer for one hour.
*Add the vinegar and continue to simmer of another hour or until beef is tender.
*Slice the beef morcon, arrange on a platter and top with the sauce/ gravy poured on top. The Pinoy food recipe of beef morcon is ready to serve,..nice ! Enjoy it!
